Peach Jam  {Pectin Free}


  • 3.5-4 lbs peeled, pitted & crushed peaches
  • 2 cups sugar
  • 1 large lemon, juiced & zested


  1. Add peaches, lemon juice and zest to a large pot. Bring to a boil over med-high heat. Do not look for a rolling boil, since it’s thick; it will mainly boil around the wall of the pot, and you may see the mixture splatter in the center.
  2. Reduce heat to medium. Add sugar, and bring mixture back to a boil, stirring often to prevent sugar from scorching.
  3. Continue to boil for 25 minutes, or until desired jam consistency; stirring regularly to prevent sticking.
  4. Ladle jam into prepared pint or half pint jars, leaving 1/4 in headspace. Wipe jar mouth with a clean, damp cloth or paper towel, affix lid and band.
  5. Process in a hot water bath for 25 minutes. Let cool overnight on a covered counter before storing.
