Elderberry Syrup {Instant Pot}


  • 1 cup dried elderberries

  • 4 cups of water

  • 1 tablespoon ground cloves

  • 1 tablespoon ginger powder

  • 1 teaspoon lemon zest

  • 1 cinnamon stick

  • 1 cup raw honey


  1. Combine water, elderberries, cloves, ginger, lemon zest, and cinnamon stick in your Instant Pot. Lock lid into place, and seal the pressure valve. Using the manual cook option, set your cooker to 9 minutes on high pressure. Allow pressure to lower naturally for about 15-20 minutes. Then open vent to quick release any pressure still remaining.

  2. Place a wire mesh strainer over a large bowl, and pour syrup into the bowl; separating the berries from the liquid.

  3. Gently mash berries with a wooden spoon to release as much juice as possible, and then discard berries.

  4. Let syrup cool until no longer hot, and then add in honey. Stir until dissolved.

  5. Pour into an air tight container, like a mason jar, and store in the refrigerator for up to 2 weeks.
